There's not really a software limit to the number of adapters you can
install, although the configuration programs might trip up on undocumented
hardcoded limits. More likely, you will run out of hardware slots before
this.
Once you install a second NIC, you do need to understand a bit more about
routing so that you are configured to send the packets over the most
efficient path.
